Grounding Baked Oats

Oats can be very grounding and centering. Warm. Hearty. Sweet. Yummy. For me this recipe feels like the comfort of camping in the woods, or the fall season. Here's my recipe for my current fav for breakfast, Maple Pecan Baked Oats.

Ingredients 2 cups Bob's Red Mill oats 2 cups of oat milk 1/2 cup of chopped pecans, + a few more for topping 1/4 cup of maple syrup 2 tablespoons of chia seeds 2 tablespoons of melted coconut oil 1 teaspoon cinnamon 1 teaspoon vanilla extract 1/2 teaspoon almond extract Instructions

  1. Preheat oven to 375 degrees

  2. Mix all ingredients together in a large bowl

  3. Pour into a square baking dish

  4. Bake for 45-50minutes

  5. Store in refrigerator in airtight container for up to 4 days

  6. I like to reheat for 30sec in the microwave in the morning for breakfast.

Adapted from this Peach Baked Oats recipe. Ayurveda says no, no to adding fruit. (The peach recipe is very yummy though.) The Ayurveda folks also say to eat fresh food and no left overs too... It's about balance and intention in my book. Especially as a busy mama of two. Bon Appetite!
